Site Update without restart

To keep everything running in a 365 day data center it would be very good, to keep the down time of the heard, the monitoring, as low as possible.
A site update costs in our environment with all the backups about 3 hours.
It would be perfect to minimize the down time if the site update needs no restart, maybe just a reload of the configuration or/and a small switch from one version to the other.

Can you please be more specific, what exactly takes 3 hours? Is this something in our software or does your company require certain procedures, which add significantly to the mentioned 3 hours. We are a bid lost in what exactly this request is about. Thanks!
